Salsa Fresca or Pico De Gallo

Happy Cinco De Mayo

Living down here in Tucson has given me many recipes for Mexican Cuisine!

But I figured I'd share a simple one to add to any meal you may cook or just eat it with Chips!

 

Salsa Fresca or Pico De Gallo

What You'll need:

  • 4-5 Roma Tomatoes (Chopped)
  • 1/2 Onion -Red or White (diced)
  • 1-2 Jalapenos (instructions below)
  • 1 Long Pepper (bit milder on the heat scale-instructions below)
  • Cilantro (we like it our family so a small handful, less if you desire)
  • 1 Lime 
  • Pinch of Salt


What You'll Need To Do:

Have a bowl ready for your veggies as you prepare them.
Chop up your a Roma Tomatoes, and place them into your bowl.







Then move onto the onion. I use half of an onion here, cut it in half, place it down and cut in slices and then dice it up.







Now to the jalapenos and the long pepper (slightly milder then the jalapenos on the heat scale. If you are feeding this to someone who doesn't like too much spice just
Jalapeno is the top pepper and the Long one is well the bottom
use long peppers. I used one of each in mine. My boys and I living down here have gotten used to some heat in our Mexican Food!






Seeds and Ribs Removed
Now the peppers to decrease heat level remove the ribs of the peppers and seeds. If you love the heat then bring it on and leave them in.  Now if you chosen to remove the ribs and seeds they should look like the pic to the left. Slice the peppers long ways and cut across to dice peppers up! REMEMBER do not touch your face or eyes while doing this and remember to wash your hands after making the salsa.





Cilantro an ingredient much like parsley, but I've grown to love in Mexican cuisine. We don't mind it so I used about a small handful- 5-8 sprigs. You can use less if your not keen on it. It does give the authentic flavor in this dish! Chopped and diced up to add to the bowl. So good!




 

Lime: forgot to take a pic.. sorry but cut lime up. If they are a small limes then maybe use two. If you don't have fresh limes then the refrigerated kind is okay just add about a 1& 1/2 Tablespoons. Add all ingredients into a bowl and stir well!


Here it is --- in all its Glory! I love it on any thing. Favorite picks are taco's, tostada's, or a Snoran Dog or just serve it with TORTILLA CHIPS! Yum! Anything you plan on having for Cinco de Mayo Fiesta this will go great with. I usually make it in the morning before and then so it has time to marinate well together. I hope you enjoy!
